French Toast Casserole with Blue Hen Blue

This month we wanted to share a little bit of our family with you. Shannon Martin, our Social Media Manager is sharing the recipe to her French Toast Casserole.
This recipe is famous in the Martin household and is present at every holiday breakfast. It originally came from Shannon’s mother-in-law, Anne Martin. Anne makes this every Christmas. French Toast Casserole is easy to prepare ahead of time and easy to double. Trust us you are going to need extra. French Toast Casserole is perfect for any brunch and pairs well with Blue Hen Blue, you can add seltzer if you want to make it fizzy!
Ingredient List
French Bread
For Mixture:
8 Eggs
2 cups Half and Half
2 Tbs Sugar
1 tsp Vanilla
¼ tsp Cinnamon
¼ tsp Nutmeg
Topping:
1 cup Butter softened
1 cup Brown Sugar
2 Tbs Corn Syrup
½ tsp Cinnamon
½ tsp Nutmeg
Directions
Start off with a loaf of French or Challah Bread, it works best if it is stale. Slice the bread and put in a greased 9×13 inch baking dish.
Next, combine eggs, milk, sugar, vanilla, half and half, cinnamon, nutmeg, and salt in a large bowl. Pour the mixture over your bread, cover your baking dish, and put it in the refrigerator overnight.
Preheat oven to 350 degrees. Combine the softened butter, brown sugar, corn syrup, and spices into a bowl use a hand mixer to blend for best results. Spread the topping on the French Toast and bake for 40 minutes, according to my mother-in-law, for me it is closer to an hour. The top should be browned, and the egg mixture is completely cooked. Once fully cooked remove from oven and let cool 10-15 minutes. This is the perfect time to open a bottle of your favorite wine!
